Coconut Milk Hot Chocolate with Collagen
If you’re anything like me, you crave a chocolaty treat before bed. I developed this low carb gestational diabetes friendly coconut milk hot chocolate recipe with collagen to satisfy your sweet tooth and curb those bedtime sugar cravings!
I was SHOCKED when I was diagnosed with gestational diabetes. After-all, my only risk factor was being over the age of 25. I was always a normal weight and my baby was measuring in the 36th percentile. I feared I would have to follow a strict diet and exercise constantly or go on medication. So far I have been able to manage with simple dietary changes and increased walking (praise the Lord!).
As I explored the diagnosis, I learned so much by reading Real Food for Gestational Diabetes by Lily Nichols. I learned about carb intolerance and some easy swaps to lower my overall carb intake. One swap I’ve incorporated is drinking coconut milk or almond milk instead of conventional dairy milk. Making these gestational diabetes friendly and low carb swaps, I’ve been able to control my sugars so far WITHOUT medicine.
While one cup of whole milk contains 12g of carbs, one serving of coconut milk and one cup of almond milk contains only 1g. If using a full-fat coconut milk (found with the cream separated, such as in canned coconut milk) I suggest diluting with water to get just the right consistency. I included this in the recipe.

Gestational Diabetes Friendly Hot Chocolate
Equipment
- 1 sauce pan
- 1 whisk
- 1 tbsp measuring spoon
- 1 tsp measuring spoon
Ingredients
- 1/2 cup coconut milk (cream included)
- 1/2 cup water
- 2 tbsp cocoa powder
- 1-2 tsp honey add more to make sweeter
- 1/4 tsp vanilla
- 1/4 tsp cinnamon
- 1 pinch sea salt
- 1 scoop vital proteins unflavored collagen (optional)
Instructions
- shake coconut milk to ensure it is well-mixed
- add ingredients to sauce pan
- turn to medium heat
- whisk ingredients together until dissolved and mixture well combined
- bring to a simmer / desired temperature
- pour into mug and enjoy!
