Gestational Diabetes Friendly Hot Chocolate

When I got diagnosed with gestational diabetes at 28 weeks pregnant, I had to find a way to enjoy my night-time "sweet treat" WITHOUT spiking my sugar. I developed this low(er) carb hot chocolate with only 13 grams carbs, 21 grams fat, and 3-13 grams of protein (depending on if you add the collagen or not). I hope you enjoy!

Equipment

  • 1 sauce pan
  • 1 whisk
  • 1 tbsp measuring spoon
  • 1 tsp measuring spoon

Ingredients
  

  • 1/2 cup coconut milk (cream included)
  • 1/2 cup water
  • 2 tbsp cocoa powder
  • 1-2 tsp honey add more to make sweeter
  • 1/4 tsp vanilla
  • 1/4 tsp cinnamon
  • 1 pinch sea salt
  • 1 scoop vital proteins unflavored collagen (optional)

Instructions
 

  • shake coconut milk to ensure it is well-mixed
  • add ingredients to sauce pan
  • turn to medium heat
  • whisk ingredients together until dissolved and mixture well combined
  • bring to a simmer / desired temperature
  • pour into mug and enjoy!
